High quality beers, a well-rounded aperitiff, the perfect drink choice to pair with a cheese platter: this is what we wanted to realise from the start. Giving people the possibility to choose an alcohol-free option!
Analyzing the standard brewing processes, we identified what was preventing its creation: alcohol removal, inefficient steps and losses of flavour compounds.
We take a different route: we rethought the whole process, from the recipe to a carefully controlled fermentation from the start till the end, keeping alcohol formation low while building flavour, body, and mouthfeel. Pretty nerdy, I must confess, but what did you expect from two engineers?
The result is Swiss craft alcohol-free beer with its proper character — loved and suggested by our Chefs.
